KANTOK COOKING CLASS, BURASARI RESORT PATONG

This year, I kick-started the new year the right way with a January 1 cooking class at Kantok Restaurant Burasari.

Being as food-obsessed as I am, I had spotted the signs dotted around the resort advertising the cooking classes about 30 seconds after we checked in, and made it a priority to book one in as soon as possible!

I went with a simple class, choosing the most popular option on Kantok’s cooking class options list – Red Duck Curry. However if you’re keen to expand your skill set even more, Kantok has whole range of different classes available that are definitely worth checking out!

On the first day of the year, I headed to the beautiful outdoor kitchen at Kantok, put on my apron and couldn't wait to get started. Honestly, I’m not sure you can get a much better location for a cooking class!

Kantok Chef Am, who looks after the Thai section of the restaurant, was my teacher for the day and happily answered my (many!) questions throughout the cook.

The ingredients were all laid out ready to go, and I carefully followed Am’s instructions to create the Red Duck Curry. She was great – explaining the role of each ingredient, the origin of the more unusual ones including pea eggplants which look like little green chickpeas, how to perfectly cook a duck breast and where I might be able to source the ingredients back home in Australia. She even waited patiently whilst I took photos from every angle imaginable for instagramming later on.

At the end of the cook, I sat down to eat my dish and far out, it was delicious! Absolutely flavour packed, not too crazy spicy (my preference!), with the sweetness of the grapes and pineapple perfectly balanced by the little bitter bursts of the pea eggplants.

I walked out of the restaurant in a world of food-coma happiness. I’m not sure I could have started 2017 in a better way!
